Apparently everything, but I do know what will get rid of them. Boric Acid powder. Or just plain Borax, which has boric acid powder in it. Just sprinkle it around the perimeters of the house and rooms. Especially corners and around any plumbing that comes through the wall. Also, find the drain pan under the refrigerator because they love water. Put some boric acid powder in it. Don't need alot, just a sprinkle here and there. Since the "sweet" bugs breath through their legs, this sufficates them.

Cockroaches like to eat just about anything!
Cockroaches like food that contain starch. They will eat wallpaper paste, cheese, beer, leather, bakery products, hair, flakes of dried skin, soiled clothing ,starch in book binding paint, bookbindings, and paper. They also like to eat the crumbs that we humans leave behind.
