Reactions to anxiety and stress... vary person to person...
some people tap their feet other's sweat... some break out in a rash, or become flush.

Sometime in your life... you've conditioned that response.

If you like you can stop it... with much effort, but the first thing to do is to learn how to better deal with what's making you nervious or scared

When you get nervous or scared your body goes into what's known as "Fight or flight" mode. More specifically, your body activates the sympathetic nervous system which does a number of things for you,
speeds up your heart rate
increases your respirations (number of times you breathe per minute)
dilates your pupils
constricts the blood vessels in your extremities (to provide more blood to vital organs)
slows down the digestive system
decreases salivation and gastrointestinal secretions
etc

So, the increase of oxygen and blood flow will cause you to feel an extra surge of energy, which some people expend by bouncing their legs up and down.
Nothing out of the ordinary.

It's annoying, isn't it?

It happens because you get an adrenalin rush, that's that feeling that sort of washes over you, kind of a cold excitement almost. You shake because it wears stimulates all your muscles, and then wears off.

It is absolutely normal behaviour and nothing to really worry about. When one is nervous, it is evident in shaking, sweat, etc etc.
