If you are talking about weaning your 11 1/2 month old from breast to bottle, start by giving him/her a few ounces of milk/formula each day, gradually increasing that amount. Just take one step at a time and don't rush it. Feel free to contact me via email if i took this question wrong.

Start giving him a sippy cup if you haven't yet. Give him bottle only at bed and nap time. Once he gets used to this routine put water only in the bottle at nap time. Once he's used to that (he'll fuss at first) then start putting water in the bottle at night.
Once he starts realizing that the only thing he is getting from the bottle is water he'll not want it so much and be more interested in the sippy cup.

If your breast feeding, its a different story. You can't exactly put water in your breasts. You should still start giving him a sippy cup and save breast feeding for bed and nap times. It might take a little while since you will have to wean him gradually so you don't feel engorged yourself. Maybe just skipping one feeding at first for a few days and then skipping two feedings once your body (and baby) adjust to that etc, til you are down to feeding only at bed and nap time. Then replace your breasts with a bottle or a pacie if you think he still needs something.

I hope you mean 11 &1/2 MONTH (not year) old, as for that I dreaded that too, my son is now 13 months. And frankly there is no easy way to do it (I have two children), my first weaned herself at 7 months much to my horror (I wasn't prepared, but she just STOPPED nursing). A gradual method is best, make sure the child is USED to whatever method you plan on getting his liquids in him in advance (like mine breastfed for so long and WOULD NOT take a bottle at 9 months I started giving him juice in a sippy cup instead). This isn't a problem if you've already given him juice in a bottle or sippy cup by now. I just slowly started cutting back until I would nurse him 2-3 times a day (once before nap and once before bed, the third time happened IF for some odd reason his nap was interrupted and he ended up needing a second nap). These nursings will be the hardest for BOTH of you to get rid of (for me it was SO easy to nurse my son until he fell asleep at my breast). So start now a bedtime routine, nurse him well before you know he wants to go to sleep, and then if you think he isn't full, give him a cup or bottle to finish filling up on, read him a book , sing him a song whatever. Cuddle up with his favorite blanket, or toy. Just stay away from nursing being the LAST thing he does before sleeping. Once you esablish this routine it will be easy to replace the cup or bottle for your nighttime nursing (or naptime nursing), and to be honest you MIGHT just have to set down a date in your calendar and say something like BY July 1st I will NOT breastfeed him anymore, and if despite your efforts nothing works, well then pull the cold turkey stunt, for some it's the only way to get them off it. I was fortunate with my son I had him down to the one a day nursing (before bed) and then we went on a trip and my husband came back from Iraq (he's in the military) and my son is NOT one who adjusts well to changes, so he went on an eating strike (and he's usually a VERY good eater), and one week before his first birthday he REFUSED to nurse (but it really didn't hurt either one of us because I had slowly taken him off). A day or two later he was back to eating but I figured by then there was no reason to start nursing him to go right back to trying to get him off of it again. Good luck, I know it's a hard thing to let go of (for you both). I sometimes miss it (then I remember how EVERY nursing bra ever made is ALWAYS white, and how much I like to wear dark colors and I say oh nevermind). It's a major milestone between babyhood and toddlerhood!

you might want to rephrase your question. You said 11 1/2 year old.....i think you mean MONTH OLD. Anyways i would just feed him only when you get really engorged. Your milk supply will then decrease every day.

Replace a feeding with a cup or bottle, a week at a time. You can replace the night time feeding last. If you choose, you can continue to nurse at bed time only, for a longer period of time if you wish. Your body will acclimate itself.

you should not switch him to whole milk right away cause it will cause constipation. As it done to my son.

you should put half formaula and half whole milk in a bottle and each time put more whole milk than formula.
