Ask them to coffee. Don't be subtle, just do it. Subtlety is cool but with the wrong person they'll never get it. Just ask!

I don't think you can. If you are asking for a date, ask for a date. Otherwise, you could lead up to it by inviting him/her to go out with you and a group of people a few times first to kind of test the water and make things comfortable between the two of you.

..this is sorta easy (well, easy for ME to say.. writin ya, huh? ha) You try and talk to 'em one on one (hang w/them in say a crowd, but try and get their attention just on YOU, man) and just ask what they are interested in.. Mention (make it up if ya have to, but don't go too much out on a limb since they might 'ask ya questions') something fun to do.. Say, "Want to do it sometime?" Then throw in a line or two like.. 'we can maybe grab a bite to eat before.. after..' or 'let's have coffee (I like coffee.. sorry!) right now and discuss it, K?' Heck, it's easy. I don't know how subtle it is but ya gotta be 'bold' sometime. For some reason this really turns the chicks on .. they think you really WANT 'em! later (melancholia)

the most subtle way would be to tell them where you are going and what you will be doing, and then offer them the chance to tag along if they wish.

I don't think you can do it subtly. If you don't ask them right out, you might not get the answer you want.
