Having a great teacher who impacts your life is great. Many teachers never get told how important they are so it would be really nice if you wrote him a letter.
However, it is also easy to fall in love with a teacher when you are young. It sounds as if you have much deeper feelings for him and you know that it is wrong to have them.
Many grown ups had crushes on their teachers too, but, they realized when they were your age that nothing could come of it.
Write him a letter of thanks telling him the powerful impact he made on your life .............that he made a difference because he cared and made learning fun. Tell him that he will be missed.

give him a card, hand-made or store-bought, and have it say something like, "thank you for all the great things you tought me this year", or "you were the greatest teacher I've ever had, I really wish you didn't have to go away." or "I learned so much from your class, it meant a lot that you cared so much about teaching us" Something to that effect, it won't sound so 'i love you'-ish, but it will convey the point that you liked him as a teacher.

The most appropriate thing would be to give him a card telling him what you have just said, that he is a good teacher, you have learned a lot, and you appreciate him. It will mean a lot to him.

a letter or thank you card is most appropriate, hand-written, not a hallmark. Or if you know of some particular gift he would enjoy (thats inexpensive), that works too. Don't buy random gifts though like teddy bears, those are easily forgotten.
Basically just repeat to him your first sentence, that's pretty complimentary right there :) we guys don't show it but we're quite prone to flattery.

Trust your thoughts to HallMark, or some other card maker. They have all those thoughts and words printed out for you.
Maybe some small gift, would be nice. I 'm sure he will appreciate your kindness.

walk up to him and say you are sorry he lost his teaching job and tell him how much you enjoyed having him as one of your teachers
