It is to do with ginger beer because that was the only fizzy drink available to kids years ago. You couldn't ask for beer so you asked for ginger and then when other flavours were included the name ginger just stuck

It's got nothing to do with Irn Bru. A lot of shops used to brew ginger beer and was the main fizzy drink available- the name shortened to 'ginger'. It later became a generic term for any fizzy drink.

Firstly not all Scots call it Ginger!
Goes back to the past when ginger beer & lemonade were the first available I guess. In a lot of places we say lemonade & not ginger

im a scot and neither myself nor anyone i know calls it ginger anymore! its an old slang term and i dont know why it got called that.
