You can start and own a company, however you cannot perform any work for that company. Your H1 visa only allows you to work for the company who sponsored you.
If you want to work for your own company you should get a new H1 for your own company. You can also get your own company to sponsor you for a green card. I think there is also a visa category for people who own and invest a large amount of money in a company.
