No. Windows will detect and store a different profile for each hotspot. You can go in and define your preferred network. If there are multiple networks, you can choose which one you want to connect to.

No, all you need is a network access key (some places charge for internet, like Starbucks) but Panera Bread offers free WiFi access. Like I said you may have to pay per hour, per day and at Starbucks you can buy a day pass.

The software built into Windows connects to the routers. They standardized the protocols (802.11b and 802.11g), so you shouldn't need additional software unless it's a very weird paid method, which is extremely rare.
