Our anniversary is coming up in a week, and I won't be able to see him at all becuase I am out of the country. What can I give him (even though I am no where near him) that will show him how much I love him and care?

Depends on how long you will be away. I am sure he knows but try and plan something for your return and give both of you something to look forward to.
