There are so many its hard to start. The most important would be (and this is only an opinion) :

Enzyme based reactions

Oxidation reactions (burning your food to make energy)

Oxygenation of the blood

Nerve impulse tranfer chemisty

Protein synthesis reactions

Cell growth mechanisms

Control of blood sugar

Toxin metabolism and control

There are an awful lot of these, i could go on and on : the body needs pretty much all of its chemistry. Tough question.
