This is a saying that has actually been misquoted from the original, rendering meaningless.
It was originally "You cannot eat your cake & have it too." meaning that once the cake was eaten it was gone, which made a lot more sense.
The accepted version of it that "You cannot have your cake & eat it too" does not make any sense at all to me either since if you have cake, why shouldn't you eat it?.

Only because it's incorrect. The phrase was originally "You can't eak your cake and have it too." No-one is quite sure when it changed - the general guess is that the alternative version which is used today just rolled off the tongue better - but the original actually makes sense!

Try to understand what it means and what she is saying. No statement is perfect but by rejecting the statement you are evading the actual problem she is pointing out. You might try to hear it as something more like "your statement is inconsistent" or "your desire for free time conflicts with your desire to earn money" or just deal with the issue rather than getting stuck on the words. Close your ears to the words. Listen to the underlying meaning or intent.

It's ridiculous. It's as if your parents are telling you "yeah you could go to the movies next weekend" and then telling you that same day you're going to the movies "oh, no. you're not going to the movies today"
It's stupid. Why would you wanna do all you gotta do in order to get what you want, to not get it in the end anyway?
it's stupid.

She's just trying to teach you that sometimes you have to make sacrifices. Be glad that you have a mother that is willing to prepare you for life after you leave home.

I prefer the international equivalents:
Zambia - you can't chase a lion and be a gazelle
France - you can't eat those snails, you stupid American!
China - ice is slick, beware skid demon
