Limestone. It disolves over time with water so every time it rains and the rain water seeps through the ground, it takes a tiny bit of the limestone with it. Over 1,000 of years enough limestone gets taken away to form a space or cave. Limestone mines also have Stalagtites and Stalagmites that form when the limestone ladden water drips in the same spot over a long period of time. Each drop of water leaves a little limestone behind eventually forming the spikes and points.

Mostly limestone, but in oklahoma we have alabaster caves also.
