An ellipsis is normally three dots (...) used to indicate omitted words, particularly from a quote.

Dashes are known as either "en dash" or "em dash." The en dash is used to indicate a closed range, or a connection between two things of almost any kind: (June-July 2006; 100-250 meters). The em dash indicates a sudden break in thought—a parenthetical statement like this one—or an open range (such as "John Doe, 1987—").

usually, a dash indicates that another statement will follow; with the ellipsis, this does not have to necessarily take place

An ellipsis denotes an unfinished thought or speech, or some words missing. A dsh denotes an interrupted thought or speech.
