Heres a few, the word Empire is really up to interpretation, Ive missed middle age kingdoms due to the fact there is no real cohesive empire, could almost count Holy Roman empire.
Missed out some Indian because regrettably I do not know enough, but only to Guess there was primarily fighting between Kingdoms and anything would interfere with Persia. Skeptical bout Asia due for the same reasons, plus differing political regime, again am not certain in this area

There were a great many but the only one that matters today is the American Empire. When the British left in the 18th century the USA was only thirteen states. Since then it has aquired more states by conquest and purchase, and several offshore possessions such as Puerto Rico.
In recognition of this New York is called the Empire State and its tallest building in New York City was the Empire State building.

The definition of "Empire" has changed over time. Nowadays an "empirial" nation would be a superpower that influences the entire planet, whereas a thousand years ago the Byzantine Empire was barely the size of Canada. Before the Roman and Persian Empires, a massive imperial nation may be the size of Michigan.

For example, as Plato states, 11.500 years ago, there were the empires of Atlantis, Athens, Egypt, and so on.
About 3,000 years ago there were Egyptian, Chinese, Persian, Indian, some in America (North and South), etc. empires.
Greeks never had empires, they were civilized (organization in city states), except the empire of Alexander the Great, which soon broke into 5 - 7 smaller empires.
Then, about 22 centuries ago we have 2 great empires, the Roman and that of Chin (in China), as well as others world wide.
The list, as I mentioned above is too long to include everything!
