Whenever I take any assignment, I workout in detail, taking in to consideration the resources available, the challenges in that work Man hours required to complete the task, any unforeseen delay due to surprises on which I don't have the controll.
In spite of all these, if the work is not completed, there must be deviation in the approach/delivery which I will document it and present during the weekend presentation and explain the reason/advantage of taking deviation/delay, I trust, As long as the intentions are clear, even GOD (Why only your Chief!) will be with you.

Discuss your assignments with your boss thoroughly including the time deadlines. If you have more than one assignment at a time, ask for help prioritizing the different assignments.

Document everything. Provided a daily or weekly progress report. When you realize that you will miss a deadline, let your boss know at once.

Open discussion helps prevent a lot of frustration.
