Because British Airways needed a selling point and the "London Big Expensive Ferris Wheel" just didn't sound catchy enough.

Actually, the idea is that from the top of the ride you can see all of London in every direction - the perfect birds-eye view.

Personally, I think the Thames riverboat guide said it best:
"On the right, you'll see the London Eyesore..."

The London Eye is the largest observation wheel in the world, built in 1999 on the south bank of the river Thames in London. Standing 135 metres high, it gives one a panoramic view of London up to 25 kilometres in all directions. Therefore, it’s called ‘London Eye’. An observation wheel is different in design from the Ferris wheel as passenger cars are mounted on the exterior of the wheel instead of suspended from its circumference.

Maybe because you get a 'bird's EYE view' of London when you're at the top!

I don't know it for sure, but it's what I've always assumed.
