The best way to play Monopoly is to play by the written rules, which most people only think they know. Variants such as "free parking" only make the game longer as they introduce more money into a game where the goal is to bankrupt the other players. These variants are the reason why Monopoly is such a long game. When played by the rules, a game of Monopoly generally only lasts an hour and a half or so.
As I said, I would read the actual rules to the game, as most people don't really know the actual rules, such as auctioning off a property if someone lands on it and doesn't want to buy it.

I think the biggest variant for the majority of Monopoly players is the rules behind Free Parking. Free parking is just that - a reprieve before rounding the board into the higher-priced properties. However, we put money in the middle of the board, too. We start the game out with $500 from the bank in Free Parking. Then all fines and other payments goes straight to the middle of the board and the next contestant to land on Free Parking is the winner of the loot!
Another variation we use: You don't have to build evenly on properties. For example, the rules state if you want one house on one property in a monopoly, you have to buy one house for each of the properties within the monopoly. In our rules, you can just buy one at a time, if you like. Same for hotels. It allows players with less money to stay in the game longer.

The free parking rule with the money in the middle is pretty common. Two other rules that we like are if you roll doubles then you don't have to pay on the space that you land on, and if you are in jail you can't collect any rent.
Other than that, if you are looking for adult rule variations, the possibilities are endless...

the fines for going to jail, and the fines for other items in community chest and chance go in the middle and if you land on free parking you get it all.

everybody gets all the money distributed evenly. no banker.
i call it our nation's government if it ever stops spending all of our economic funds on root beer and war supplies.
