Which airline has the most space between seats-or how can I find out? If I request the exit row seats, do they have a lot more legroom? He has a bad leg that he has to keep stretched out most of the time. Any ideas?

Exit row would be best for more legroom, however, with a bad leg, he will be disqualified from those seats. Try SeatGuru (link below). You will need to know which type aircraft are on the route. If I recall, American are flying a 767, and USAir are flying a 757 to Glasgow this summer.

The emergency exit would be best, but as the other answer said, he won't be allowed to sit there. So, my suggestion would be to sit behind the last row of either business or first class. This way, he won't have to deal with another chair in his lap and they usually are a little larger.

If you are going to be on a long flight, I think it would be a really good idea to either get him a seat in business or first class. No matter which airline you use, their economy class seats won't be comfortable for him. If you get him, at least, business class, the flgith will be alot more comfortable, otherwise it could be pretty miserable.
