Debussy, Ravel, Poulenc (I was going to say Chopin but he was really Polish); George Brassens; Breton music in general; Stephane Grappelly (*Belgian* French ... but he had to be there, since whenever I go to France and speak French somebody generally asks if I am Belgian!)

Well, if "French Canadian" counts, I would say Alain Caron. He is a phenomonal bass jazz/fusion player.
