They really didnt have a choice. All they knew was farm labor, thats the reason most of them stayed, up until the Industrial revolution anyway.

I wouldn't be a serf because I come from nobility, and I would never have to worry about that because I would be on the level of Baroness.

Whatever job would allow me to stay in a town for a year. At that point I would be free and could not be taken back by my feudal lord.

other than the daily farming, hunting, and gathering for food, i would like to have made and decorated pottery. i would like to have sold it maybe at the market. the middle ages brought forth many beautiful and inspiring works of art.
