The answer depends on what you are looking for. If you want to be a soloist or if you want to find groups easily and get lots of uber loot that way. I'll try and answer both:
1. SOLOIST - Hunters or Warlocks. You get your own personal tank, and both classes do sick damage and from all accounts are two of the most enjoyable classes to play. High on the "fun factor". Both classes are mana dependant but Warlocks can cannibalize there own health to make mana and bandages are faster (and free once you learn to make them) than sitting and drinking water so the edge goes to Warlocks. Gnomes are just cute to look at so if you are going to invest hundreds of hours into a character make sure you like looking at it.
2. Want to get invited to tons of groups? Want to be included in guild runs to MC/AQ/ZG/BWL? Make a priest. Few people have the patience to solo level up priests so there aren't as many out there as rogues/hunters/warriors/paladins/etc, etc. If you learn to play a priest well, you will find it is, in the end, your fastest path to uber loot. Once you realize the majority of your time is spent at 60, the time to get from 1st to 60th is only a very small part of your character's life span. So buck up and enjoy the "hell" that is soloing a priest to 60 then get ready to be everyone's favorite "must have" class for groups and raids.
3. This is your bonus answer: Play a Warlock! They are almost as sought after in groups and raids, are also one of the more rare classes, are easy to solo with and level to 60 quickly, and you'll get invited to lots of groups/raids because you can do AOE, tons of DPS, provide healthstones, and the all important Soul Stone. Great warlocks can often top the DPS charts, even outdoing mages and rogues. This is a great utility class and very enjoyable to solo with.

Priest may not be the best for the first 30 or so lvls but buy the time ur at 40 and get shadow for ull forget all about it. It all depends on how u like to play. ROgues r one of my favorite classes, but i find the hunters are easier. if u have aim msn messenger or yahoo messenger just let me no and ill help u out.

I've been playing a gnome warlock since the day the game came out 19 months ago, and I've had a blast. The gnomes have the best laugh, cry and dance in the game, and warlocks are just very fun to play.

Anything is better than a priest. Too much work, too easy to blame every failing on, impossible to please everyone, too many consumables required to do your job and to buff, and too taken for granted and not appreciated.
Other than that... it sure is fun to save some lives even if the next chance they get, they're yelling at you for 'letting them' die.

warlock or hunters serve me well, they have thier pets, that way they aren't too dependant on thier guilds.
p.s. hunters have less dependancy on items as well, pretty good i guess
(plus cooler pets)
