There are many programs that can provide stealth realtime monitoring of another computer system; however, doing so on someone else's system without their knowledge and consent is illegal.

Use a program like WinVNC or RealVNC (its new name). It will have an icon in the taskbar, so it is not *perfectly* silent, but unless the other person really knows what they are doing it will not be obvious. A search for WinVNC on download.com gave the link below for a similar program (I have no idea if this other program is any good!)
