Visit Hoover Dam and Lake Mead. Take a hike in the desert. Limit yourself to one half mile out and one half mile back. Locate a Ranger station to let someone know where you are going and when you get back.
People have gotten lost in the desert and wandered around until they died. You have to be careful.
Swimming in the lake is fun. No mouthful of salt water to worry about.

The restaurant they have there is AWESOME. You should try to eat there at least once.
Then there is the all you can eat Seafood buffet at the Rio Hotel. It is about $35 per person, but well worth it. Their World buffet is good too, but the Seafood buffet they have is probably the best in Vegas. http://www.harrahs.com/our_casinos/rlv/dining/dining_detail_012.html
