It means that Pip never leaves her (and therefore never sees another shadow between Estella and himself) again. In other words, "We stayed so close to each other from that point on, there wasn't even enough room for a shadow to be seen."

It means that from then on he feels that the "she" will no longer leave his side, that they will already be together for good. :)
