I know someone with a more whimsical answer will probably be chosen as best but, anyway...

Even today, doctors often misdiagnose people as dead when they are not. According to Rodney Davies' The Lazarus Syndrome, it is still a common occurrence, though most cases reported are in countries other than the States, & even more common among religions that require quick burials &/or frown upon autopsies. Most case caused by drowning, drug overdoes, or heart or nervous conditions.

In cases of apparent death, according to people that have survived, they are completely aware of what is going on but are unable to prevent it.
If you are aware that you are being pronounced dead but unable to stop it, then I guess that would know that you are actually dead. Or will be very soon.

By "you", I am assuming that you refer to the general you as if to ask...How does one know when another person is dead?
In that case the breathing would be stopped. dead people do not breath. the heart would be stopped, dead hearts do not beat.
the brain would cease electrical activity.
there would be no tactile sensation so the body would not respond to touch.
This can be very difficult to be absolutely certain because some of these things can be happening very slightly and hard to detect. many people have been buried alive ( about 1 in 25) in past eras when we did not have sophistcated methods to test and make sure. They used to put a string in coffins and attach it to a bell just in case. the corpse revived. Irish have all night wakes to sit by the corpse to make sure he is dead before burial.
I personally believe that Jesus was not dead but appeared dead to those around him, for instance. He was trained as a yogi to go to a trance to simulate death and later revive. very common skill.
Who knew?

Clinical death occurs when a patient's heartbeat and breathing have stopped. Since breathing rarely continues when the heart is stopped, clinical death is synonymous with cardiac arrest or cardiac death. The reversal of clinical death is sometimes possible through CPR, defibrillation, epinephrine injection, and other treatments. Resuscitation after more than 4 to 6 minutes of clinical death at normal body temperature is difficult, and can result in brain damage or later brain death even if cardiac resuscitation is successful. Longer intervals of clinical death can be survived under conditions of hypothermia. Hypothermia also improves outcomes after resuscitation from clinical death even if body temperature is not lowered until after resuscitation.

Well, I could tell that a large chunk of my left leg was dead by the fact that it was black. It was bruised up beyond recognition. The dead stuff had to be removed.

When it no longer matters if you wake up from a dream, when there is nothing of beauty to touch any of your senses in the world outside your cocoon, where your heart turns to stone against any human contact.

Or is that just losing the will to live?

You can never die, you are a soul. The only thing you will know that you are out of the present body and enters into a new body according to your karma (deeds)
