I currently go to school at UT in Knoxville and I've just moved from the Fort Sanders area to the Old City. There are several places to live in Knoxville and I have a few suggestions based on your question.
Fort Sanders is about 1/2 mile from downtown and is located on the opposite side of the World's Fair Park from the city. It's adjacent to the University of Tennessee. This area is still technically within walking distance of downtown, UT, and "the strip." "The strip" is Cumberland Ave, which is located between Fort Sanders and UT. It has many restaurants, bars, and a few shops. Fort Sanders consists mainily of students living in houses or apartments. It's usually a pretty wild area and there are always parties going on here and there.

The Old City is located near downtown. This is a historic area with many pre-1900 buildings. Some of Knoxville's best shops, restaurants, and bars are located in the Old City. There are several apartments located behind city store fronts and offices. Sterchi Lofts is located in the Old City. They have very nice apartments, but tend to be pretty expensive. The Old City is about 1/5 of a mile from Gay Street, Knoxville's main street. This would also be a nice place to live. I've lived in the Old City for a couple months now and safety has not been a problem. There are a good amount of homeless people, as can be found in any city, but I've never had a problem with any of them. Much of downtown Knoxville is being refurbished and the city is growing in size and beauty. During the spring, there is a free concert at Market Square every Thursday night. Thousands of people attend and it's very nice to be within walking distance. Bands such as Blues Traveler, Steve Winwood, and Shooter Jennings have come to "Sundown in the City." There is a free trolley system that runs throughout the city so that you can easily get from downtown to Fort Sanders to UT. If you're not lazy, it's pretty easy to walk to all these locations. The vast majority of Knoxville's population lives in West Knoxville. Knoxville is a very sprawling city. You can live 30 minutes from downtown and still technically "live in Knoxville." If you wish to live in the suburbs of West Knoxville, Bearden is a good place to live. From your question, I'm assuming you want to live within walking distance of shops and restaurants though. I would suggest the Old City or downtown for you.

To be able to walk to get coffee I would suggest downtown for sure. It has totally be revitalized over the last years.

In general the nicest part of Knoxville is West Knoxville, west of Pellissippi parkway. More expensive there and newer and better schools.
