Standing on the top of my 8 foot ladder, I still can't reach the top of my Cherry tree. Is it a good idea to trim the top of the Cherry tree so I can actually reach the cherries?

Sounds a bit tall. If you can't reach it from a 6' ladder then prune this winter. Take it to 8' and try to start a second trunk about waist high.

Yes, trees are healthier if pruned. Besides you don't want to let the tree get so out of control you can't get at it or your neighbors start to complain about it infringing on their property.
