The order of hands is based on the probability of the hand being dealt
hand number Probability
straight flush 40 .000015
4-of-a-kind 624 .00024
full house 3,744 .00144
flush 5,108 .0020
straight 10,200 .0039
3-of-a-kind 54,912 .0211
two pairs 123,552 .0475
pair 1,098,240 .4226
high card 1,302,540 .5012
however if you play with one or more wild cards, some hands will become more probable than as listed above, five of a kind becomes a possible hand, and the order of the hands, from rarest to most common, may change in the process.

Generally accepted order for 5 card poker (e.g. Texas Holdem) is:
- highest card
- 1 pair
- 2 pairs
- 3 of a kind
- straight (cards in a run, not same suit)
- flush (all cards same suit)
- full house (3 of a kind, plus a pair)
- 4 of a kind
- straight flush (cards in a run, same suit)
Where two players have the same hand, the person with the next highest card wins (this is known as the "kicker").
Oh, and the link cattyf didn't post is this:
