The name is "Miss HESTER MOFET", anagram for "Miss 'the rest of me'". It's from the movie *Silence of the Lambs*

Hannibal Lector (the gentlemanly former psychologist, sociopathic serial killer and cannibal), who likes to use anagrams as clues uses it (speaking to Clarice Starling, the young FBI agent):

Clarice later figures it out:
