Depending on the types of waves, but one of Newton's laws states that matter will remain on the same trajectory and same velocity unless it is forced out of it.

The air in general can make light bend as well (think of when it's very hot, we usually see concrete streets like water). In general, soundwaves can bend when it reaches any hard obstacle, e.g. metal (think of instruments).

For waves on water this might be because the depth of the water changes or because its salt content changes.

For sound waves in air it might be because the temperature of the air changes.

For light waves it is often because the light goes from one medium (air) into another (say the glass of a prism or water).

I think its varying heights of the ocean bottom. The higher the bottom, the more the resistance and it slows down the wave.
