Ryanair to Gatwick, then National Express to Brighton. The flight takes 1 hr. 15 min. and costs €50 return if you get the €.99+tax flights. The coach trip goes from Gatwick North and Gatwick South terminals, takes 1 hour and costs £9.70 return.

You could instead take train from Gatwick South terminal to Brighton. The service is frequent, and will save you about 30 minutes travel time each way. Price is £15 return.
