I arrive at SJ at 5:30pm and need to arrive at sfo no later than 8pm on a Sunday.

The CalTrain should work.
Catch the CalTrain at Santa Clara station at 6:05 p.m.
Gets you into Millbrae at 7:08 p.m.

From Millbrae, it's a five minute ride on the blue line to SFO.
Worse case scenario has you there at 7:36.

Cheapest AND fastest way (because your timing is pretty tight, doesn't allow you any time for traffic delays) would be to grab your luggage and run out to the curb and get on a Super Shuttle. These are shared vanpools that run out of most major airports now, if you are not familiar with the service. Nowhere near as expensive as a taxi, because you share the ride, they usually make about 3-4 stops, but if you call ahead and inquire you might find a whole van full of people all heading to SFO too. I'm guessing taxi fare for that ride would be about $50-60, but Super Shuttle shouldn't be more than about $20-25.

Also doesn't hurt to call the airline and see what they recommend. Some of the larger airlines run their own regular shuttles between adjacent airports in major metropolitan areas. But seriously, if there is any way you can change your incoming flight so you can just change planes at SFO instead of having to do this airport hop, do it. Two and a half hours is tight, given the distance and normal freeway conditions along that stretch. If you are the least bit delayed arriving in San Jose, you could easily miss your flight at SFO.
