There are several resources you can use to know when to plant what, in Louisiana. All of the following are free sites.

Your hardiness planting zone appears to be 9, which means that unless a plant NEEDS a certain amount of chill time, you should be able to grow just about anything you want, as long as you amend the soil to feed the plant properly. You might want to purchase a soil test kit from somewhere like Lowe's or W/M for about $8. Alternatively you can take soil samples to your local county extension agency. well in colorado we start are herds in the house as soon as it is warm enough then i would plant them out doors
