unsaturated fats are fats that have double bonds between therir atoms. they are usualy liquid at room temperature. thats why oils are unsaturated fats. when they are hydrogenated, they lose their double bonds and become saturated with hydrogen atoms. saturated fats are solid at room temperature, think butter.
