Well it depends what kind of cheese it is, if it's deliciously matured cheddar that crumbles under the knife, then it is surely the crumbling that exposes the flavour to the air, and the air to the flavour. This is oxidised deliciousness.

On the other end of the scale, if it is very moist cheese like a creamy slice of Port Salut, then it is the manufacturing process, delicious juices are injected directly into the centre (the "heart") of the cheese, and the wax prevents it from escaping, giving you a delicious experience like no other.
