Disneyland Paris or America - all day long the little one will run around be suprised and excited by the rides/parades/princesses and then flake out come bed time leaving you and your partner time to spend alone.

Gotta be Majorca. I've been there a few times with young kids, seems many others do too and always been great for them + quite normal to go out in evenings with young kids in tow.
Obviously avoid young & lively areas, most other places should be fine.
Alcudia has stuff for everyone so can't go wrong there. But I prefer resorts in South East of Island (can't remember names now).

I've travelled a bit in the Med and the choice is huge. Ibiza - eg Portinax. Minorca - almost any resort. Halikadi (Greek mainland) Crete eg Stalis (not Malia!), Olu Deniz in Turkey

Seaside Bulgaria, all inclusive (Zlatni Pyasatsi for instance). It's not expensive, you can do trips around the place you are staying and the food is good. Water t is about 27 and the climate is good - warm, but not too warm.

You could try interrailing in Europe, if your kid loves trains then it will be a real adventure, plus you get to see more of the countries than just the cities and airports.

Go somewhere HERE in the US. Our economy could use a few extra travelers this summer and there is a lot more to offer here than in Europe.

I would prefer Albena - Bulgaria - South East Europe - Black Sea.
I go there with my two boys every summer.
The animation for children can be included.
Varna - airport + transfer.

If you want a really fine beach, then Playa Del Ingles in the Canaries.

I would say...Christmas or Halloween.
Christmas because of the gifts and Halloween because they get to dress up and express their creativity. For a costume, I suggest letting the child choose what they want to be, then letting them plan it and help make it.

Put the kid with relatives or a child minder and go for a fabulous holiday with your spouse.
