Well skeptical in what way exactly? Because of the possible mercury content or simply because they don't like fish? Your question could use some further details.

Fish, in itself, is not bad. It's the chemicals they end up with in their systems from pollution. Mercury is a big one that causes birth defects and migrains. Raw fish, such as sushi, is really bad for you since fish have parasites that need to be killed when it's cooked. I love fish but I've cut back a lot, especially tuna. I love salmon and if you get it from a certain part of Alaska, it's good and has little to no mercury in it. Shrimp, crab, clams, and fish with smooth skin (catfish) are actually what I like to call "filter fish". They are bottom feeders and their main job is to act as filters to keep water clean. I still eat shrimp, but not as much as I used to.

Perhaps because so much of the fish caught nowadays has high levels of mercury in it to the point where it's unsafe to eat in large quantities.

Maybe it's because of fear of Mercury poisioning. many years ago, japan had a problem with mercury in fish, mercury isn't something you can eat once and be poisioned. you have to consume it pretty steady to get poisioned. they had a body of water that had mercury in it . or maybe because it spoils.as does all food , well maybe not jerky.
