Mi dispiace, I don't know enough Italian to ask this question in your language. I need a recipe for the thick, sweet Balsamic sauce sometimes used to pour over Insalata Caprese.

Please quit giving me recipes for the Insalata. I've already said that twice.

I need the recipe for BALSAMIC SAUCE that is thick & sweet. My request is not difficult.

Actually, you shouldn't use balsamic sauce over caprese salad - it would overpower it!
However, you can prepare a balsamic salad dressing/sauce this way:
Take a few tablespoons of aceto balsamico di Modena. The "real thing" (aceto balsamico tradizionale di Modena) is really expensive, but you can find something more or less similar in well-stocked stores... add a pinch of salt, pepper and some cane sugar (according to your tastes - I like it not too much sweetish).
Mix well, then add more or less the same amount of extra-virgin olive oil and beat well the mixture with a fork to emulsify it. Voilà!
If it is not as dense as the one you tasted,the next time you can try and concentrate for a few minutes the balsamic vinegar, cooking it over a low flame (in this case, you'll need less sugar).

Patate lessate con l. a. buccia, affettate in modo regolare, fagiolini lessati un pò al dente, cubetti di quartirolo o di feta, qualche pezzetto di peperone arrostito, se ti piace, qualche oliva nera. . condisci il tutto con prezzemolo tritato, olio greater, un pò di aceto balsamico. Se l. a. metti in un contenitore sottovuoto, è buona anche l'indomani.
