Asado de costillas a la barbacoa

Ingredientes

1 kg costillar de cerdo
1/2 cebolla(s) rallada
1 diente(s) ajo(s) picados
3/4 taza(s) Ketchup
1/4 taza(s) salsa worcestershire
1/6 taza(s) azúcar
sal y pimienta a gusto

Preparación:

Freír en un poco de aceite la cebolla y los ajos, incorporar el resto de los ingredientes. menos las costillas. Cocinar revolviendo constantemente 15 minutos. Barnizar con estas salsa las costillas, dejar reposar por 1 hora antes de asar. Poner sobre la parrilla caliente, pincelando de vez en cuando con salsa.

La receta exacta no la sé, pero quedan buenisimas si:
Cueces el costillar con una cebolla entera y pelada, sal y pimienta. Cuando este blandita, escurrir.
Comprar sopa de cebolla en sobre (ya preparada).
Mezclarla con un poquito de agua y pincelar el costillar con esta preparación y unas gotas de miel.
Al horno a dorar y a comérselas.

LA RECETA QUE TE HA DICHO LA ANTERIOR RESPUESTA , SEGURAMENTE ESTERA BUENISINMA,... PERO UN POQUITO DE POR FAVOR,... QUE LO ENTENDAMOS TODOS,...!!!!

El sabor lo puedes escoger,pues puedes preparar el aderezo de muchas maneras. Lo que sí es bien importante es sacarle el pellejo que tienen por la parte inferior, ese que es bien duro y luego las cocinas en agua antes de asarlas en el horno.

En un recipiente de cristal pones las costillas en agua a medio tapar por media hora y las viras. Entonces las pones del otro lado con agua a medio tapar también y cuando quieras las asas en el horno o en el carbón o como gustes. Eso lo que hace es ponerlas como natillas.

1. Often when you buy ribs at the butcher counter, you get a full rack of ribs that wouldn't fit on a plate. Usually you just have to cut these long racks in half to get the perfect serving size (about 4-6 rib bones per rack). You'll have 4 of these smaller racks at about a pound each.

2. Preheat the oven to 300°F.

3. Tear off 4 pieces of aluminum foil that are roughly 6 inches longer than the ribs.

4. Coat the ribs, front and back, with your choice of BBQ sauce. Place a rack of ribs, one at a time, onto a piece of foil lengthwise and wrap up tightly.

5. Place the ribs into the oven with the seam of the foil wrap facing up. Cook for 2-2 1/2 hours, or until you see the meat of the ribs shrinking back from the cut ends of the bones by about 1/2 inch. This long cooking time will ensure that the meat will be very tender and fall of the bone.

6. Toward the end of the cooking time, prepare the barbeque.

7. Remove the ribs from the foil and smother them with additional barbeque sauce. Be sure to save some for later.

8. Grill the ribs on the hot barbeque for 2-4 minutes per side, or just until you see several spots of charred blackened sauce. Watch for flames and do not burn!

9. When the ribs are done, use a sharp knife to slice the meat between each bone about halfway down. This will make it easier to tear the ribs apart when they are served. Serve the ribs piping hot with additional sauce on the side, if desired.

Tidbits

If you've got time to marinate these ribs in advance, do it. I've found these ribs are extraordinary when they've been soaking in barbeque sauce for 24 hours before cooking. Just prepare the ribs in the foil as described in the recipe and keep them in your fridge. Toss them, foil and all, into the oven the next day, 2-2 1/2 hours before you plan to scarf out.

Tony Roma's Baby Backs
Combine and heat over high heat until boiling:

1 cup ketchup
1 cup vinegar
1/2 cup dark corn syrup
2 teaspoons sugar
1/2 teaspoon salt
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon tabasco pepper sauce

Reduce heat, simmer 30-40 minutes until thick.

Coat 4 pounds of baby back pork ribs, front and back, with BBQ sauce.

Wrap ribs in aluminum foil. Bake at 300 degrees for 2 - 2 1/2 hours.

Remove ribs from foil and smother with more sauce.
Grill on hot barbecue for 2-4 minutes per side.
