Ciao! I do not speak Italian, unfortunately. I would absolutely LOVE to have a delicious recipe for pasta sauce. The kind that is made from "scratch" and is only found in Italy!! Thank you so much!! :)

INGREDIENTS for 4 people

Bavette 350 g

Pine seeds 50 g

Basil 40 g

Extra virgin olive oil 2 dl

Garlic 1 glove

Parmigiano Reggiano cheese 2 tablespoons

Pecorino (Ewe's milk cheese) 1 tablespoon

Salt to taste

Pepper to taste

PREPARATION

1. Grind in a mixer the basil, pine seeds, garlic and oil. Add the grated cheeses and stir everything together.

2. Cook the Bavette in plenty of salted water, drain it, and add the sauce to it stirring well .


CHEF'S NOTE

If you want to give a particular touch to this pasta, add little cubes of potatoes and boiled string beans (cut into long pieces).

there are sauces made from "scratch" everywhere in the world that are just as good as some in Italy. That said, i have had the best meals (sauces) in Italy.

A basic, and very good, tomato sauce is easy.

All you need is fresh tomatoes (not the watery tomatoes; the ones that are big and not bright red) San Marzano or Roma tomatoes are the best.

Garlic cloves
Basil
Olive Oil (good quality, usually has to be a DOC, DOP etc and has to be a product of Italy)

Fry garlic in olive oil until golden brown (not too coloured or else the garlic will give off of strong and bitter taste)
Add the tomatoes (half roughly chopped/diced and the other half passed through a food mill)
Let the tomatoes stew until you get a nice saucy consistency
Add salt and a nice amount of basil (basil has to be put towards the end or else it will lose all its flavour at the beginning)

Voila, a good basic tomato sauce made from scratch
