請問 Sautéing是否可以取代 stir fry ?

炒菜的炒通常都翻譯作 stir fry，今天看到一個字 Sautéing， 好像也是炒的意思，請問 Sautéing是否可以取代 stir fry ?

Sautéing is a method of cooking food that uses a small amount of fat in a shallow pan over relatively high heat. Sauter means "to jump" in French — the food is cooked until it jumps.

Food that is sautéed is usually cooked for a relatively short period of time over high heat, with the goal of browning the food while preserving its color, moisture and flavor. This is very common with more tender cuts of meat, e.g. tenderloin, pork chops, or filet mignon. Sautéing differs from searing in that the sautéed food is thoroughly cooked in the process. One may sear simply to add flavor and improve appearance before another process is used to finish cooking it.

妳說 stir fry means to cook food in hot oil by immersion ( deep frying) . . . ，但是炒應該沒用到 deep frying 吧 ? 維基說 with the goal of browning the food while preserving its color, 這有點像是 煎 了。

不行, 兩種是不同的煮法.

首先用的鍋子就不同, saute 用的是稍微深一點的平底鍋. 而 stir fry 用的是炒鍋 (stir fry 本來就是老中發明出來的英文, 來形容"炒" 這項煮菜的方法, 所以, 你看家裡炒菜是用什麼鍋, 那跟平底鍋的差別就很明顯了).

另外, 炒菜要嘛大火快炒, 不然就小火慢炒, 而 saute 反而比較像在煎東西. 自己意會一下. wikipedia 上都有照片.

當然不對, 任何鍋子都可以拿來烹調食物, 但是不是任何鍋子都可拿来炒菜(stir fry). 炒菜(stir fry) 在這裡是指一特定的食物料理技法...

正如同, 法國菜的 saute 就是得用平底鍋, 你拿個 wok 來 saute 就像拿水果刀來剁大骨. 回答至此, 希望對你有幫助.

saute means to fry lightly in a little butter and/or oil

stir fry means to cook food in hot oil by immersion ( deep frying) or shallow frying on both side

therefore, there are different. stir fry can not replace saute ^^
