請問有沒有一種「反鹹」物質,可以中和鹽的鹹味 ?
做菜時如果不小心放多了鹽,就可以加一點這種物質,把鹹味去掉。

基本上要把鹹味去掉是不可能的,

但是以中醫的五味而言,

酸(木)、甜(土)、苦(火)、辣(金)、鹹(水),

相生相剋,正好可以改變口感與味道,

水生木可以洩鹹味,

水被土剋可以壓住鹼味,

所以當鹹味過重時,加入糖與醋,

就可以將鹹味降低,

我想吃起來就有如泡菜 or 蜜餞(鹹酸甜)一般。

而這樣的方式在食品添加劑一書也有提到此法,

可以現代知識與仍與古代學識相通。
