A father plays a role in child development that is quite different from (1. which 2. what 3. that) of the mother.

其實這三個字都可以用, 只是句子的寫法不一樣:

(1)A father plays a role in child development that1 is quite different from that2 of the mother.

第一個that是關係代名詞(有連接詞的功能), 代表[a role](稱為"先行詞"), 引導一個形容詞子句來修飾[a role]. 在這個形容詞子句中, that是當主詞.
第二個that是指示代名詞, 也是代表[a role]. 它是介系詞from的受詞.

您先看這個簡單句:
A book is quite different from a pen.
[a book]是當主詞
[a pen]是當主詞補語

現在把[a book]換成[that1], [a pen]換成[that2 of the mother], 是不是就成了原句呢?
它們各自扮演同樣的角色.

第一個that可以換成which, 第二個that後面接的是一個片語而不是句子, 故不用which.

(2)A father plays a role in child development that is quite different from the one which the mother does.

[the one](不定代名詞)代替[a role], 當先行詞, 這時可以用which, 但是後面要改為子句(形容詞子句).
不論用which或that, 都可以省略, 因為是當[does](=play)的受詞.
[does]代替前面相同的動詞play

(3)A father plays a role in child development that is quite different from what the mother does.

如果不想用先行詞, 就選what(=[the role that]=[the role which]), 它有雙重功能(先行詞 關係代名詞).
後面一樣要改為子句(這裡變成是名詞子句).
