WITH the accent because it is a pronoun substituting "este dia". Pronouns always with accent to differentiate them from the demostravive (without accent)
éste es un dia especial (pronoun)
este dia es especial (demo)

You should know, spanish people don't have a very good writing.
I have a very good writing, and I will help you.

"éste" is the correct one, because after "éste" ther ir no noun. If you want to add a noun, "este" shouldn't have accent.

So you could say:
"Creo que este día es uno de los días más grandes de mi carrera deportiva"
or
"Creo que éste es uno de los días más grandes de mi carrera deportiva.

"éste", ésta"... should be with accent, when there is no noun after them.

with accent .....because it is replacing "día" so you do not have to mention it twice...
creo que este día es uno de los días más.....in this case you should not use the accent, but.......as you do not want to say the same word twice, you place the accent to make it clear what you are pointing at..which is the word that is missing...
creo que éste es uno de los días.....
do you understand the idea?????

the people above is missing the core of the problem...that you are avoiding to repeat the same word to make sense, ok?

you hafta write it with accent because it is referring to (día) and even we took out (día) from the sentence, we will continue understanding it.

so the correct sentence would stand:

creo que éste es uno de los días más grandes de mi carrera deportiva
