Hi princess,
A vegan can eat in Paris anything (s)he can think and/or dream of:
All the fruit and dried fruit,
All the vegetables and greens, a huge selection of beans, lentils...
Wheat, barley... and all the other grains,
Cereal, rice, pasta without eggs...
Tofu, tempeh,
Seaweeds, spirula,
And of course a lot of bread...
Soy milk, fruit or veggie juice.. and wine!
Don't forget all the sorbets, no milk, no eggs, just fruit and (a little) sugar!!!
I'm sure I forgot some food, but the idea of my answer was that you can find (almost) everything in Paris !

Vegetables, fruits, ...
Plenty of vegan restaurants, fresh markets. So no worry, you won't starve in Paris !

Mainly... vegatables !
Ther is a lot of places and market in wich you can buy vegatables or fruits. And in many restaurants you can find vegan menus.
