為您說明幾個觀念:
英文裡會用到關係代名詞, 主要是因為要把兩個(或以上)的簡單句合併(因此就有兩個動詞), 用一個複雜句來表達. 而其中一句所含的名詞(或代名詞)用關係代名詞來表達, 它的功能有二: (1) 負責連接這兩個簡單句(所以關代屬於一種連接詞), (2) 本身則擔任另一句的主詞或受詞 .
I live in a house. (A)
The house has many windows. (B)
The windows of the house are large. (C)
A + B :
I live in a house which(代表house, 擔任主詞, 主格) has many windows.
我住的那間屋子有很多窗戶.
A + C :
I live in a house whose(代表house, 所有格) windows are large.
=I live in a house of which the windows are large.
我住在一間有很多窗戶的屋子.
B + A :
The house which(代表house, 當受詞) I live in has many windows.
我住的屋子有很多窗子.

現在來看版主的句子:
[那男孩跟那狗的感情]是我們所難以(=超乎我們的)想像(名詞意涵)的.
=我們難以想像(動詞)那男孩跟那狗的感情.
只有單一的動作, 故並不需要關代.
The affection between the boy and the dog is beyond our imagination.
如果是下列這句就用得到關代:
那男孩跟那狗的感情是我們所難以想像的, 他們已經不住在這兒了.
The boy and the dog, whose affection is beyond our imagination, no longer live here.
=The boy and the dog, of which the affection is beyond our imagination, no longer live here.
* "人+物"的關代所有格用法如上.
* "感情" 在下傾向翻譯為 affection.

關代當所有格時，若為人則是whose，若為物也是whose或of which，若為人+物，一樣是whose 至於你的問題:男孩跟狗的感情是我們所難以想像的。=>我在翻譯時不會用到whose:The emotion between the boy and the dog is hard to imagine.

你所想像的統稱狀況是不存在的。你要不就是說"他們"==>所有格their, 要不就是用the boy's and the dog's... 而後者跟一般"史密斯先生和史密斯太太的車" (Mr. Smith's and Mrs. Smith's car)是一樣的, 並不需因為是人+動物而另外出現不同的規則。
註: 我不記得當"史密斯先生和史密斯太太共同擁有車"時, 史密斯先生後面要不要加's了...(羞)
