The difference between Brazilian coffee and coffees from other countries is the selection of grains of coffee beans and how they are roasted. Usually the coffee sold at the supermarkets is of low quality and it tends to be very acid (due to the high percentage of conilon beans in its composition). Some coffee shops sell several types of blending of coffee beans and roasted in several ways. Some prefer the beans roasted with sugar, so it is darker than usual. Brazilian tends to appreciate well roasted beans (which is very very roated!!! very very dark) and it is prepared with little quantity of water. In the coffee machine for 14 cups we tend to use almost 7 spoons of coffee.
In some countryside in the north, people mix water with sugar and coffee and boils it. Later they filter it through a filter made of cloth.

We like our coffe stronger than in the USA. Where I work they say a good coffe should be like a woman. Black, hot and sweet.

The most common recipe to prepare coffee drink here in Brasil is that below:

Ingredients
3 soup spoons of coffee powder
1/2 liter of water

Put a paper filter (Melitta)in one support above a recipient to receive de coffee drink and puts the coffee powder in the filter.

Boil the water and turn it over the coffee powder.
The coffee drink will be filtered and will be ready to drink. Add sugar or other sweetener.

Have several receipes to prepare, but the coffe drink made how the recipe above have less caffeine.
Many people in Brazil uses filter made with cotton fabric.

Some people prefer boil the water and add the coffee powder while it is boiling, boil for two minutes and after filter the drink, but whit this metod the drink have more caffeine.

Forgive me because I don't speak english very well, but I love brazilian recipes.

It is very strange that, in Brazil, we drink a disgusting coffe! The best of our production is for exportation, so only the bad grains are saved for internal consume. Generally, we make what you call french coffe, with a filter, but stronger than those you can drink in other countries. I, personally, dont like this kind of coffe and prefer the soluble ones, like Nescafè.
