請問有些文件在翻譯成中文時會加註「如果中英文文件有出入時，以中文為主...」那段話應該中文是怎麼寫的？翻譯成英文又應該怎麼寫？

合約書的制式寫法。
小心 contradiction 不要拼錯了!

The Chinese version (of the document) should have priority over the English version should there be any inconsistency or contradictoin in between.have priority over 也可以寫成:prevail over 或 override(... should there be .... = ... if there should be 萬一有...的話)
