蝦仁炒飯 Shrimp Fried Rice
材料 4人份 ingredients 4servings
冷飯 400克 cooled rice 400g
蝦仁 80克 shrimps 80g
火腿 20克 ham 20g
青豆 20克 green peas 20g
雞蛋 2 個 eggs 2
蔥末 2匙 scallion chopped 2teaspoons
橄欖油 2杯 olive oil 2cups 400cc
胡椒鹽 味精 少許 dash each of salt pepper and MSG
作法
1飯弄散 火腿切丁 Loosen the rice dice ham
2蝦抽去泥腸用熱水稍燙 Devein the shrimps and parboil
3雞蛋打散 Break up the eggs
4鍋燒熱倒入橄欖油 中火 Heat the pan add oil egg quickly overmoderate heat
加蛋快炒等快凝結時加飯 when the egg absorbed add the rice and stir-fry
將鍋翻轉待粒粒成分離狀 turning the pan until is no longer sticky add shrimps
加入蝦再炒最後剩餘的材 continue frying add the remaining scallion ham peas
料倒入鍋中輕炒盛盤 fry and place on a platter
