One is with water while the other is with pressure (or so called stamping).

沖床：利用快速的衝程來衝出一個孔，所以會有一塊下腳料，像我們在用的烤肉網就適用沖床衝出來的
壓床：利用慢速高壓對材料施力，讓材料變形所以會有上下模，汽車外殼就是用壓床壓出來的。
